Dissertation of Siti Dharmawati, S.Pt.,M.P.: Improving the Appearance and Carcass Quality of Alabio Ducks Using Bromelain Enzyme from Swamp Snail Meat

Ducks play a role as donor fulfillment animal protein needs, both meat and eggs. However, in Indonesia, supply is still very low compared to chicken meat. Meanwhilepopulation Alabio ducks which are local South Kalimantan poultry based on livestock statistics (2020)experience enhancement. As well as its ability to produce eggs is very high, so it deserves to be used as a provider of animal protein.

However, the main obstacle to raising Alabio ducks is feed, which accounts for 60-70% of production costs. The high cost of feed is due to the fact that most duck farmers in South Kalimantan use commercial feed and imported fish meal.

This statement was made by a lecturer at the Islamic University of Kalimantan, Siti Dharmawati, S.Pt., M.P. in his research entitled“The Use of Bromelain Enzymes in Processing Swamp Snail (Pomacea sp.) Meat and Its Implications for the Appearance and Carcass Quality of Male Alabio Ducks”. The research is a dissertation text as a requirement for obtaining a doctoral degree which has been tested openly, Monday (19/6/2023).

Dharma argues that pThe cost of feeding Alabio ducks can be reduced by preparing feed rations that use local feed ingredients. One of them is the swamp snail which is abundant throughout the year and can be processed as a source of protein equivalent to fish meal. However, some of the ingredients in swamp snails are difficult for birds to digest and contain bacteria salmonella and heavy metals.

“So the swamp snails can be absorbed well by the ducks management specifically to increase protein digestibility, eliminate anti nutrition, logam-logam weight and bacteria pathogens.” Dharma explained

She added the bromelain enzyme obtained from pineapple extract. Function as an anti-inflammatory in poultry, speed up the metabolic process, improve the system digestion.

Based on the research results, the feed made from swamp snails and pineapples is capable of increased feed protein digestibility and metabolic energy, drier feces, improved production performance and carcass quality of male Alabio ducks. This research led Siti Dharmawati to obtain a Doctorate degree (Dr.) in Postgraduate Doctoral Program in Animal Science at the Faculty of Animal Science, Universitas Brawijaya (Fapet UB). (dta)
