Manfaatkan Limbah Tulang Kambing Antarkan Dosen Fapet UB Raih Gelar Doktor

Goat bone is one of collagen protein sources which can be taken its quintessence to be gelatin. But recently its utilization is not optimal yet and tend to be just thrown away to become garbage. To be armed with knowledge on processing of livestock products, Ir. Mustakim, MP has a research on gelatin production from goat bones with soaking process using a lime solution.

Mustakim is a lecturer at Livestock Products Technology Division of Faculty of Animal Husbandry UB who pursued his doctoral program at Livestock Sciences in postgraduate program of the faculty where he works for. Supervised by Dr. Ir. Hari Purnomo, M.App.Sc; Dr. Ir. Lilik Eka Radiati, MS and Prof. Dr. Ir. Djalal Rosyidi, MS, he lifted a research titled “The Effects of The Origin of Limestone, Limestone Concentration and Soaking Time in Limestone Solution towards Chemical Physics Quality of Goat Bones Gelatin”.

According to the man who was born 58 years ago, limestone as a gelatin production ingredient is quite abundant in East Java. Therefore he uses limestone from Tulungagung, Malang and Tuban. It aims to know the effects on the origin of limestone, limestone concentration, and soaking time in lime solution towards chemical-physics of goat bones gelatin.

Goat bone is soaked with lime solution in a certain composition and period. The research indicates that limestone origin and concentration and also its soaking in lime solution are significantly give effects in water level, ash, protein, fat, colour notation scale, and pH number of goat bone gelatin. Thus could be concluded that limestone originated from the three areas in East Java could be used in gelatin production process, and producing gelatin with chemical physics that fulfill Indonesian National Standard.

The research was used as a dissertation requirement to obtain doctoral degree. This 2016 he should a sigh of relief, since Prof. Dr.Sc.Agr. Ir. Suyadi, MS accompanied by Dr. Ir. Irfan H. Djunaidi, MSc (Secretary of Postgraduate Program) through a judicium process mentioned that Mustakim is entitled to obtain a doctoral degree.

“Alhamdulillah, finally I could accomplish this research thanks to the guidance of lecturers who patiently guided me. Initially I was pessimistic to be able to accomplish it since my declining health condition,” he said. [dita/trans. Denok]
