Lecturer Faculty of Animal Husbandry, Andalas University (Unand), Winda Sartika, S.Pt., M.Sc. conducted research on the rendang industry supply chain in Payakumbuh City – West Sumatra. The research which is an accompanying paper was compiled with Prof. Budi Hartono, Hari Dwi Utami, Ph.D., and Prof. Lilik Eka Radiati as the supervising commission.

Winda is registered as a student of the Doctoral Program in Animal Science at the Faculty of Animal Science, Universitas Brawijaya (Fapet UB) class of 2019. She has taken an open dissertation exam, Thursday (20/7/2023) in a hybrid manner.

 According to him, the consumption of beef in Payakumbuh City has increased from 2017 so that it has an impact on the demand for beef in the market. That’s because The raw material for rendang for Small and Medium Industries (IKM) in Payakumbuh City is obtained from beef retailers in traditional markets. In addition, the innovation of three variants of beef rendang is also able to increase the amount of beef rendang production, which has an impact on increasing the amount of raw materials.

However, the high demand for beef has led to competition in fulfilling needs which has an impact on the shortage of beef supply for the rendang industry. Resulting in obstacles in the rendang production process in Payakumbuh City.

When the demand for rendang increases, it is not uncommon for producers to buy time to meet consumer needs due to the limited raw materials available. If conditions like this continue to occur, it will be difficult for the future rendang industry to meet exports.

“Therefore, research is needed on the management of the beef supply chain for the rendang industry in Payakumbuh City with a dynamic system model, to maintain a balance between the availability of beef and the raw material needs of the rendang industry.” said Winda

The research was conducted in Payakumbuh City, using a survey research method. There were 102 research respondents consisting of rendang IKM producers, retailers, wholesalers, collectors, beef cattle breeders and slaughterhouses in Payakumbuh RPH.

The results of the analysis concluded that supply chain management at IKM Rendang in Payakumbuh City has an efficient product flow. Meanwhile, financial flows flow from breeders to final consumers and vice versa in cash and non-cash. Then the flow of information runs with the coordination and cooperation of all the supply chain institutions involved.

 So the dynamic supply chain design model for the rendang industry provides an overview of the availability of beef for the raw material needs for rendang production. Good management of production time, coordination and cooperation from supply chain institutions is able to provide certainty about the availability of raw materials for Rendang IKM. (dta)
