Lecturers of the Faculty of Animal Science Universitas Brawijaya (Fapet UB) do community service through mentoring activities to make yogurt for students of SMK Negeri 1 Kalianget – Sumenep, Monday (18/10/ 2021). The team consists of Dr. Manik Eirry Sawitri, Dr. Purwadi, Dr. Abdul Manab, Dr. Imam Thohari, Dr. Eny Sri Widyastuti, Dr. Herly Evanuarini, Dr. Dedes Amertaningtyas, Dr. Premy Puspitawati Rahayu, Ria Dewi Andriani, M. Sc, Mulia Winirsya Apriliyani, MP, and Dicky Tri Utama, PhD.

Yogurt is a synbiotic fermented milk product. However, this time, Fapet UB lecturers innovate by using Sumenep local additives as natural dyes enriched with dietary fiber (fiber) and antioxidants. Such as red dragon fruit (Hylocereus polyrhizus), Moringa leaves (Moringa oleifera, L), telang flower (Clitoria ternatea), and inulin (a lot of bananas). Where red dragon fruit gives a bright red color, Moringa leaves give a green color, and telang flowers are purple.

According to Dr. Riri (Dr. Manik Eirry’s nickname), the addition of these ingredients produces colorful yogurt that is more attractive to consumers. Besides that, it contains quite a lot of antioxidants, so it can improve the body’s immune system to ward off free radicals that threaten body cells such as cancer. And useful for maintaining health in the new normal.

The devotion method is carried out in a hybrid manner guided by Dr. Abdul Manab. Through presentations of knowledge and practice on how to process yogurt fortified with dietary fiber (fiber) as well as displaying video guidance on processing, packaging, labeling and food safety.

“We hope that the outcome of this activity is to increase knowledge and skills about yogurt enriched with dietary fiber (fiber) and antioxidants as a method to create new entrepreneurs for graduates of SMKN-1 Sumenep, so that they can support the strengthening of local food in Sumenep district.” explained Riri (dta)
